Smile Hazelnut Spritz Cookies

COOKING TIME
Active Time: 1 hour
Total Time: 1 hour and 40 minutes

INGREDIENTS

1 cup chopped hazelnuts, toasted at 350°F 7 minutes or until fragrant
3 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
3 sticks (11/2 cups) unsalted butter, softened
11/4 cups granulated sugar
1 large egg
11/2 tsp vanilla extract

You also need: a cookie press with decorative disks, colored decorating sugars and nonpareils



PREPARATION

1. Heat oven to 350°F.

2. Pulse cooled nuts and 1/4 cup flour in food processor until finely ground. Whisk nut mixture, remaining flour, baking powder and salt in a bowl to mix.

3. Beat butter, sugar, egg and extract in a large bowl with mixer on high speed until fluffy. On low speed, gradually beat in flour mixture until a soft dough forms. Divide in fourths. Do not chill.

4. Following manufacturer’s instructions, place dough into cookie press and press out cookies about 1 in. apart on ungreased baking sheet(s). (Change disks for different shapes.) Sprinkle with sugars and nonpareils.

5. Bake 10 to 12 minutes until golden at edges. Cool slightly on sheet on a wire rack, then transfer to rack to cool completely.





Storage tip: Store airtight with wax paper between layers at cool room temperature up to 3 weeks, or freeze up to 3 months.
