PEANUT BUTTER TEMPTATIONS
1/2 C butter, softened
1/2 C peanut butter (I prefer smooth)
1/2 C sugar
1/2 C packed brown sugar
1 large egg
1 t vanilla extract
3/4 t baking soda
1/2 t salt
1-1/4 C all-purpose flour
48 mini peanut butter cups, unwrapped
Cream butter and peanut butter together. Add the sugars, egg and vanilla. Mix well. Add baking soda and salt; mix in flour until well blended. Shape dough into 1 inch balls. Place in greased mini-muffin tins. Bake at 35 degrees for 10-12 minutes. Remove from oven and immediately press a peanut butter cup into the center of each cookie crust. Cool completely before removing from pans. Makes about 4 dozen.
